In celebration of firearm season I thought I would post what we eat for lunch.. I'm normally taking all of nov off for vacation. And wife does a huge pot of chilli..
We generally double the recipe
2lbs ground venison 4tbls vegetable oil 1lg onion chopped 1lg green pepper chopped 3 celery stalks chopped 1 cup fresh shrooms chopped 6 med tomatos peeled and quartered 1 med zuchini cut 1/2" cubes 1 32oz can of V8 (spicy if desired) 1 16oz can red kidney beans 1/2tsp chilli powder 1tsp ground cumin 1 6oz can tomato paste
Brown the meat in vegetable oil in a large cast iron pan over medium heat. Lightly saute`onions, greenpeppers, celery and shrooms.
Transfer to a soup kettle. And rest of the ingrediants and simmer atleast 2hrs
We do ours in a lg roaster.
And top it off with home made cheesy biscuits
